A few nights ago, a friend asked for some cutting board advice. He wanted to know if it was okay to use soap on wooden cutting boards. In fear of ruining his nice board, he’d just been washing it off with hot water, even after cutting meats, and described to me how there were little pieces of meat still stuck in the board from dinners past.
For the record: it is okay to use soap on a cutting board. It is not okay to soak cutting boards in hot water for long periods of time. Opinions differ on whether or not they can handle the dishwasher–in general, I try to avoid it because I’ve had a few crack, but once every few months I will add a wooden board to our dishwasher after a particularly bacterial cooking session (or just out of pure laziness).
