Sugar Snap Peas with Mint and Lime

Here’s the twist on the typical peas-mint-lemon combination: lime juice.

TIME: 5 minutes
MAKES: 4 servings

1/2 pound sugar snap peas, rinsed
2 teaspoons freshly squeezed lime juice
1 tablespoon extra virgin olive oil
1 tablespoon finely chopped fresh mint
Salt and freshly ground pepper, to taste

Mix the peas, lime juice, olive oil, and mint together in a bowl, and season to taste with salt and pepper. Serve at room temperature.
