House Painting, Part 1

Color: Overseas (a strong win, in the end).

Day 1: Very few clouds, max. 75 (ish) degrees. Light breeze, three very helpful friends.

House Painting Breakfast Casserole

Because the best way to a day full of energy is always, always some form of huevos rancheros.

Recipe 244 of 365: House-Painting Breakfast Casserole

Preheat the oven to 400 degrees. Spray a small baking dish or pie pan with vegetable oil spray, and place three corn tortillas in the bottom. Top with a can of rinsed, drained black beans. Whisk up 4 large eggs with a bit of salt and pepper and 1/2 cup of green salsa, pour the egg mixture over the beans, and top it all off with about a cup of shredded cheese. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the eggs have set. Chow, and get to work.
